I’ve seen a few Michelin-starred and Michelin-rated places begin to take their beer programs more seriously. and in DC come to mind, and I think (hope!) it will become a lasting trend. Few places of that caliber have beer programs commensurate with their food/wine/cocktails/spirits, which has always been disappointing given the pair-ability of beer and food. Who the hell wants to sip on an old ass Stella Artois (no shade!) when I could have something to match the character and care of the food that the staff has been obsessing over for hours and hours. I will also add: the continued popularity of Czech-style beers and pours from faucets. The nuance and skill it takes to get it right is moving the needle on proper beer service, and it’s also a great gateway for non-craft beer people to learn about foam and proper beer service.
